Turkey & Avocado Cobb Salad

(Inspired by Flower Child)

This salad is a clean, crunchy take on a Cobb — inspired by the one at Flower Child. Everything is shaved thin for that signature texture and tossed in a creamy-tangy gorgonzola vinaigrette. It’s light but satisfying, perfect for lunch or dinner.

Ingredients

Serves 2

Salad Base

• 2 cups shaved romaine

• 1 cup arugula

• 1/2 cup finely shredded red cabbage

• 1 cup shaved roasted turkey breast

• 1/2 avocado, cubed

• 1/2 cup cherry tomatoes, sliced

• 1/3 cup cucumber, thinly sliced

• 1/4 cup pickled red onion

• 2 tablespoons crunchy corn or roasted corn kernels (fresh corn works, too)

• 2 tablespoons chopped smoked almonds

Gorgonzola Vinaigrette

• 1/4 cup red wine vinegar

• 1 teaspoon Dijon mustard

• 1 teaspoon honey

• 1 small garlic clove, minced

• 1/3 cup olive oil

• 2 tablespoons crumbled gorgonzola

• Salt and pepper to taste

Instructions

1. Whisk together vinegar, mustard, honey, and garlic. Slowly add olive oil while whisking. Stir in gorgonzola.

2. In a large bowl, toss romaine, arugula, and cabbage with dressing.

3. Top with turkey, avocado, tomato, cucumber, pickled onion, corn, and almonds.

4. Finish with more vinaigrette and black pepper.
