Pumpkin Pie Smoothie
Do you ever wish vegetables could taste as good as pie? If you want a delicious and nutritious pumpkin pie in a glass, you're going to have to trust me and give this one a try. Might just be my favorite smoothie yet.
Important things to note:
- Freeze pumpkin puree into ice cube trays. 
- Frozen cauliflower is key. 
- Go ahead and freeze extra because if you’re anything like me, you’re going to want this smoothie all season long (I’m obsessed). 
Ready in 8-10 minutes
2-3 servings
Ingredients
- 1 cup pumpkin puree, FROZEN 
- 1 cup frozen cauliflower 
- 2 tablespoons greek yogurt 
- ⅓ cup milk of choice (or more to reach desired consistency) 
- 1 scoop vanilla protein powder 
- 1 ½ tablespoon almond or pecan butter 
- 1 teaspoon pumpkin pie spice 
- 2 medjool dates 
Preparation
- Make sure to plan ahead and freeze your pumpkin puree in ice cube trays the night before. 
- Add all ingredients to a high speed blender and blend until smooth. 
- Garnish with coconut whip or extra pecans if desired and enjoy 
Note:You can throw the extra servings back in the ice cube trays and store in the freezer. Later, add them to a blender with a little milk to make a thick and creamy pumpkin spice ice cream. UNREAL.
