Protein Peanut Butter Cookie Dough Stuffed Date Bites
Ingredients:
For the Cookie Dough Filling:
• 1/2 cup crunchy 1-ingredient peanut butter
• 1/4 cup vanilla or unflavored protein powder
• Pinch of salt
• Splash of almond milk (just enough to mix)
• 2 tbsp mini chocolate chips
• Dash of vanilla extract (optional)
For Assembly:
• 10 Medjool dates, pitted
• 1/2 cup white chocolate chips or chunks
• Matcha powder (green), blue spirulina powder (blue), or food coloring of choice
• Cocoa powder + a few drops of water (for speckles)
Instructions:
1. Make the cookie dough: In a bowl, mix peanut butter, protein powder, salt, a splash of almond milk, and vanilla (if using). Stir until thick dough forms. Fold in chocolate chips.
2. Stuff the dates: Open each pitted date and spoon in a bit of the cookie dough. Press gently to close.
3. Melt white chocolate: Melt the white chocolate in a microwave or double boiler. Separate into small bowls and add natural powders (like matcha or blue spirulina) to dye your chocolate.
4. Dip the dates: Dip each stuffed date in the colored chocolate and place on parchment paper to set.
5. Add speckles: Mix cocoa powder with a drop or two of water. Use a clean brush or flick with a spoon to splatter speckles on the coated dates.
6. Chill: Pop them in the fridge or freezer until the chocolate sets.
