Spicy Roasted Broccoli and Feta Salad
This is one of my go-to salads come colder winter months. I love the warmth that the roasted spicy broccoli brings to a bowl of veggies. It is incredibly easy to throw together and a great salad to prep ahead of time if that's your jam. I will usually make a couple servings and throw it together during a busy week. Its simple yet addicting.

Ingredients
Spicy Roasted Broccoli
- 1 large head broccoli, broken into small florets - 2 tablespoons avocado oil (or any neutral oil) 
- 2 tablespoons lemon juice 
- 1 teaspoon red pepper flakes (adjust to taste and tolerated spice level) 
- 1 teaspoon spicy honey 
- ¼ teaspoon salt 
- ¼ teaspoon pepper 
 
Salad
- 4 cups mixed greens 
- 1 (15 oz) can chickpeas or 1 ½ cup cooked chickpeas 
- 1 cup crumbled feta cheese 
- 1 cup cooked farro 
- ½ cup sunflower seeds or roasted almonds 
Preparation
- Gather all ingredients and preheat the oven to 400 degrees F. Line a baking sheet with parchment paper. 
- In a medium bowl, add broccoli along with oil, lemon juice, spicy honey, red pepper flakes, salt and pepper. Combine until florets are evenly coated. 
- Transfer to a lined baking sheet and roast for 12-15 minutes or until the edges are crispy. 
- While broccoli is roasting, add salad ingredients to a bowl. Add desired amount of dressing (Golden Tahini Dressing) and toss to combine. Add broccoli and enjoy!
