Protein Chocolate Pudding
This no-bake protein chocolate pudding is silky, creamy, rich and delicious. I love finding sneaky ways to incorporate protein into desserts to prevent crazy blood sugar spikes and keep me satiated. Vegan & gluten-free but you would never know that. Throw a dollop of coconut whipped cream & some chocolate chips on top and you’re in business.
I have been making this for years and it never gets old. I promise you don’t taste the tofu and if you are not into protein powder sub for additional cacao or cocoa. Trust me on this one.

Ingredients
- 1 cup organic sprouted tofu (or silken) 
- 2 tablespoons cacao powder 
- 1 tablespoons chocolate protein powder (I love @nuzest or @truvani) 
- 1 tablespoons peanut butter (or powdered peanut butter + 2 tbsp water) 
- 1-2 tablespoon maple syrup, sweeten to taste 
- Almond milk to thin as needed 
- 1 teaspoon ceylon cinnamon 
- Optional: garnish with coconut whipped cream, raspberries and chocolate chips 
Preparation
- Gather your ingredients along with a blender and two small bowls. 
- Add tofu, cacao, protein powder, peanut butter, maple syrup, almond milk and cinnamon to the blender. 
- Blend on high speed until smooth. 
- Evenly distribute the pudding into the two small bowls. Store in the refrigerator until set. 
- Add coconut whipped cream, raspberries and chocolate chips if desired.
