Spicy Honey Baked Fig & Brie Bites
These flaky, gooey baked brie bites are the perfect blend of sweet, spicy, and savory. Using phyllo dough or puff pastry and a mini cupcake tin keeps them bite-sized, making them the ideal party appetizer.
Ingredients
- 1 sheet puff pastry (or phyllo sheets stacked and cut to fit mini muffin tins) 
- 4 oz brie cheese, cut into 1 inch cubes 
- 1/4 cup fig jam 
- 2 tbsp spicy honey (or regular honey mixed with a pinch of chili flakes) 
- Fresh thyme leaves, for garnish 
- 1 egg, beaten (for egg wash) 
- Flaky sea salt, for sprinkling 
Instructions
- Set your oven to 375°F (190°C). Lightly grease a mini muffin tin. 
- If using puff pastry, roll it out to smooth any creases and cut into 2x2 inch squares. For phyllo dough, stack and cut into similar-sized squares. 
- Press each dough square into the cups, allowing the edges to remain open. 
- Place a cube of brie in each cup, top with 1/2 teaspoon of fig jam, a drizzle of spicy honey, and a few thyme leaves. 
- Brush the exposed edges of the dough with beaten egg and sprinkle with flaky sea salt. 
- Place in the oven and bake for 12-15 minutes, or until the pastry is golden and the cheese is melted. 
- Allow to cool slightly before serving warm.
